Chocolate science: Strange smells mix for that familiar thrill.

25 things that smell alone like potato chips, cooked meat, peaches, raw beef fat, cooked cabbage, human sweat, earth, cucumber, honey and more combine to make that great chocolate smell.

-Most of the flavors appear after fermenting under banana leaves followed by roasting. Before that the bean is bitter.
-Designer chocolate is next, now that we know what to combine.   The cocoa bean has close to 600 fragrances to choose from.
-News: adding a little sugar to the beans during fermentation makes extra velvety chocolate.
